Can’t decide between pancakes and eggs for breakfast? Why not have both?
I love breakfast and actually think it might be my favorite meal of the day! Sometimes it’s a tough choice between eggs (protein-rich) and oatmeal (fiber-rich). On those days I make my egg and oatmeal pancake. Three egg whites (you can add some of the yolks if it works for you), 1/3 cup quick cooking steel cut oatmeal, and cinnamon. Whip well and cook like you would a pancake. Throw some fresh fruit (or frozen) on top, sprinkle on a few chopped walnuts, add a few dollops of a greek yogurt (I use unsweetened, no fat). There is no better way to start you day!
