Avocado, Almond and Chocolate Energy Balls
Healthy fats, protein, and antioxidants make these an ideal healthy treat anytime.
- 1 cup Almond Flour
- 1/2 cup Pitted Dates
- 1 whole Avocado pitted and peeled
- 2 Tbsp Maple syrup
- 1/4 cup Cocoa powder
Combine 1 cup almond flour and dates in food processor and blend.
Add avocado, cocoa powder, maple syrup and salt and process until combined (about 1 minute). Place mixture in freezer for about 10 minutes.
Combine 2 Tbsp of almond flour and 1 Tbsp cocoa powder and spread on a plate. Add chopped nuts or sea salt if you prefer. The formed balls will be rolled in this mixture.
Remove avocado mixture and scoop out about 1 teaspoon and roll into ball. Roll on plate covered with mixture.
Place finished balls in freezer to set for 30 minutes. Store in freezer until ready to serve or share.
