uncooked whole grain
brown rice, couscous, etc.
extra virgin olive oil
ground turkey, mushrooms, your choice
14.5 diced tomatoes
bell peppers- halved
dairy, nut based, etc.
Cut peppers in half and place in baking dish (9 X 13). Drizzle with olive oil.
Preheat oven to 400 degrees. Prepare rice/grain according to package instructions.
In large skillet, cook onions until soft. About 5 minutes. Stir in tomato paste and garlic and cook for a few more minutes.
Add meat/mushrooms/black beans- your choice. Or use a combination of each. Cook well. If extra liquid/fat, drain.
Return mixture to skillet, stir in rice/grain and diced tomatoes. Season with oregano, salt, pepper.
Spoon mixture in peppers evenly and top with cheese. Cover with foil and bake for 35 minutes. Remove foil and cook for about 10 more minutes.
Garnish with parsley and enjoy!
