Avocado, Almond and Chocolate Energy Balls

Healthy fats, protein, and antioxidants make these an ideal healthy treat anytime.

Ingredients
  

  • 1 cup Almond Flour
  • 1/2 cup Pitted Dates
  • 1 whole Avocado pitted and peeled
  • 2 Tbsp Maple syrup
  • 1/4 cup Cocoa powder

Method
 

  1. Combine 1 cup almond flour and dates in food processor and blend.
  2. Add avocado, cocoa powder, maple syrup and salt and process until combined (about 1 minute). Place mixture in freezer for about 10 minutes.
  3. Combine 2 Tbsp of almond flour and 1 Tbsp cocoa powder and spread on a plate. Add chopped nuts or sea salt if you prefer. The formed balls will be rolled in this mixture.
  4. Remove avocado mixture and scoop out about 1 teaspoon and roll into ball. Roll on plate covered with mixture.
  5. Place finished balls in freezer to set for 30 minutes. Store in freezer until ready to serve or share.
