My goals are high protein, high healthy fat, high fiber, low saturated fat, nutritionally dense, low sugar, filling and delicious! This breakfast of avocado toast(Ezekiel bread+avocado+chia seeds+drizzle of avocado oil), egg white bite (pre-made with egg whites, tomato, kale, hemp seeds, cottage cheese, garlic, and red pepper), and Yogurt bowl (plain Greek yogurt+blueberries+strawberry+ seeds+ nuts) are supporting me to stay on task, focused, and energized for hours! 1 week agoBaking is often associated with comfort foods. Eating and enjoying the comfort foods -when they are made a little healthier - has a dual purpose. I made this Zucchini-Walnut loaf with apples instead of sugar, added seeds and lots of healthy grated unpeeled zucchini for a wholesome, moist, and delicious treat. Whole wheat flour and cinnamon actually provide stress relief for me- it’s a kind of outlet and a way to express myself. The best part is sharing it with others- and keeping a few pieces for myself. And I am so much happier and more satisfied than I have ever been with my food choices because of how I feel. I have found taste, nutrition, and joy in the choices I make when I eat. Truly. Multiple sclerosis, or MS, impacts somewhere between 400,000 and 1 million Americans. Multiple Sclerosis Awareness Month is a time to bring attention to a disease that many in the medical profession are still working to understand on a deeper level.
