Best Muffin Ever!
These fruit and veggie muffins are so easy to make and most of the ingredients you probably have in your kitchen without having to make another shopping trip.
We call them our ZAC Muffins- because they are filled with zucchini, apples and carrots. Try them out and don’t be afraid to add ingredients you love like raisins, nuts or mini chocolate chips. If you have a ripe banana throw that in the batter too!

ZAC Muffin (Zucchini, Apple, Carrot)
- 1 zucchini shredded with peel on
- 2 apples-unpeeled and chopped
- 2-3 carrots-shredded
- 1T melted butter, 3 T olive oil (change as you desire)
- 1 tsp vanilla
- 1 cup whole wheat flour
- 1/2 oat flour
- 1/2 t baking soda
- 1/2 t baking powder
- 1 T cinnamon
- 1 t ginger
- 1/2 cup Walnuts
- 2 T chia seeds
- 2 T flax seed
- 2 T pumpkin seeds
- Anything else like dried cranberries, raisins, other seeds, nuts chocolate chips (just a few!)
Mix all ingredients together and stir until well combined. Batter will be thick. Make sure all flour is mixed in. Scoop into Pam-sprayed or lined muffin tins.
Bake at 375 degrees F for about 23-28 minutes. Make sure the center of the muffin is done.
Makes about 12-16 yummy and healthy muffins. Enjoy.
