No Meat For Me!
I can’t remember last time I had a beef burger. It’s been a while. Years. Maybe decades. And I am so much happier and more satisfied than I have ever been with my food choices because of how I feel. I have found taste, nutrition, and joy in the choices I make when I eat. Truly. When I hear Marie Kondo’s famous line, “If it brings you joy, keep it”, I translate it into “If it brings you joy, eat it”. Eating healthy and making delicious choices that gives me energy, lifts my mood, adds bounce to my steps, and are truly yummy makes my life really good.
Life was good last night when I made this heavenly Chickpea+Zucchini Veggie Burger with a tahini-ranch sauce. Sliding the burger on a healthy, whole wheat roll (filled with fiber+protein), adding peppery arugula and serving with a side of roasted sweet potato fries- not only filled me up but I believe reduces my risk of diseases such as obesity. I believe the way we eat is a reflection of the love and respect we have for ourselves. In a world where I feel I am having less and less control, my healthy food choices gives me more power- and makes me happier and healthier.
Every morning I listen to a very short mindfulness session before I jump out of bed to start my day and it reminds me to love myself. Treat yourself like you treat others. Be kind. Maybe start small. But start. And see where it leads you. We have one life. Make it your best one.
